Diet-Friendly: Naturally dairy-free, high in protein, and Weight Watchers-friendly! Plus, they’re easy to make gluten-free with tamari.

Best Cut of Beef for Beef Broccoli Skewers
For these Asian-inspired beef skewers, NY strip steak is my top choice! It has just the right amount of marbling to keep the skewers juicy and tender. Leaner cuts like sirloin tend to dry out, so NY strip makes a big difference.
Ingredients for Soy-Marinated Beef Broccoli Skewers
Here’s everything you’ll need to make these delicious and healthy beef and broccoli skewers:
How to Make Soy-Marinated Beef Broccoli Skewers
1. Prepare the Marinade: In a medium bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated garlic, ginger, and kosher salt. Season with freshly ground black pepper.
2. Marinate the Beef: Split the marinade between two bowls. Add the beef cubes to one bowl and toss to coat. Let it marinate for 30 minutes at room temperature, stirring occasionally, or refrigerate for up to 8 hours.
3. Prep the Broccoli: While the meat marinates, separate the broccoli into 16 florets, each about 1 to 1 1/2 inches in size. Trim any larger stems.
4. Soak Skewers (if using wood): Soak wooden skewers in water for at least 20 minutes to prevent burning on the grill. Drain before threading.
5. Assemble the Skewers: Start with a scallion piece, then a broccoli floret, and a beef cube. Repeat with another scallion, broccoli, and beef, finishing with a scallion. Continue until all ingredients are used, making about 8 skewers.
6. Season and Grill: Brush the skewers with the reserved marinade, then season with a pinch of salt and pepper. Grill over high heat for about 3-4 minutes per side for medium-rare, brushing with remaining marinade. Serve right away!
Alternative Cooking Method:
To broil, preheat the broiler to high and position the rack about 6 inches from the heat. Arrange the skewers on a foil-lined baking sheet and broil for about 4 minutes per side, brushing with remaining marinade.
