Instructions

  • Chop the potatoes into small pieces, about the size of a thumb and half as wide. These little pieces will cook quicker, making sure everything is done at the same time.
  • Set your oven to 375°F to warm up.
  • Lightly coat a big baking sheet (or two smaller ones) with some olive oil spray so the potatoes don’t stick.
  • In a large mixing bowl, put in the potatoes, onions, peppers, olive oil, salt, pepper, rosemary, and a sprinkle of garlic powder. Give it a good mix to make sure everything gets a nice coating of oil and seasonings. Spread this mix out on the prepared baking sheet and pop it in the middle of the oven. Let it bake for about 15 minutes.
  • After 15 minutes, take a spoon and give everything a little toss to keep it from sticking and burning.
  • Add the sausage to the baking sheet with the potatoes and veggies. Bake for another 25–35 minutes, tossing it a couple of times to make sure nothing burns and everything cooks evenly.
  • Keep an eye on it, since cooking times can vary based on how thick your potatoes and sausage pieces are. You want to make sure the potatoes are nice and soft when poked with a fork. Enjoy!

Tips and Tricks

To ensure that the vegetables don’t get too soggy, spread them out evenly on the pan so they roast rather than steam. Stirring the ingredients halfway through the cooking process helps them roast evenly.

Notes

  • Potato options: Use firm potatoes like Yukon Gold or Russet for best results; they roast up beautifully and will hold their shape.
  • Dried sausage: Use the dried western style weiners you like to eat, I used a chicken and Cheese flavored here.
  • Roasting Tips: To make these roast sausages and potatoes, cut the potatoes so that they are similar in size to the pork sausage Links for even cooking.
  • Flavor Spin: Make it your own with some cherry tomatoes or zucchini rounds during the last twenty minutes of roasting
  • How to Serve: Enjoy hot from the pan, or topped with some grated Parmesan cheese.
