  • Chicken: I suggest chicken thighs in this recipe, however you can use a boneless skinless chicken breasts as well.
  • This adds flavour but some garlic: 2 either crushed or minced.

How to Make Chicken

Seasoning the Chicken: Start off by seasoning both sides of the chicken thighs with salt and pepper. Combine the garlic, chipotle in adobo sauce, ancho chile powder, cumin and oregano in a bowl to create spice rub. Mix this spice and butter to completely coat the chicken Leave aside for a few minutes You can go ahead and cook the chicken, but for better taste allow to marinate; this would be best done overnight.

Cooking Methods: For skillet method to cook chicken, first preheat a large nonstick ceramic coated or well-seasoned cast iron/carbon steel pan or griddle over medium-high heat and lightly spray with oil. Place the chicken thighs onto the grill, wait about 6 to7 minutes and then flip them over until both sides are nice and brown.

If grilling, preheat grill or grill pan to medium- high heat. Clean and oil the grates, to prevent sticking then grill chicken over high/low direct /indirect heat about 6-8 minutes per side (depending on thickness of meat) -to get a good char.

To air fry: preheat your airfryer to 400F then place the chicken inside and cook for 14-15 minutes, turning halfway through.

Notes

Best Marinated: let the chicken marinate, for flavoring in at least 30 minutes but preferably up to 2-4 hours. It helps the chicken to pick up those great smoky, spicy and tangy chipotle flavors in the marinade.
Cooking Temperature: To be safe, cook chicken until it reaches an internal temperature of 165°F (74°C) so you know that your food is well done and free from dangerous bacteria. For accuracy, use of a meat thermometer is advised.
COOKED CHICKEN: Resting Time – Allow the cooked chicken to rest for a couple minutes before slicing. Allowing the heat to rest so that all of the meat juice will redistribute and keep the mBurnetw juicy, tender (?).
