  • 3 lbs shoulder roast (cut from chuck section)
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cut into chunks
  • 1 onion, cut into wedges

  • In a small bowl, mix salt, pepper, minced garlic, rosemary, and thyme. Rub the mixture evenly over the shoulder roast.
