Ingredients
- 3 lbs shoulder roast (cut from chuck section)
- 2 tsp salt
- 1 tsp black pepper
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 2 tbsp olive oil
- 1 cup beef broth
- 4 carrots, peeled and cut into chunks
- 3 potatoes, peeled and cut into chunks
- 1 onion, cut into wedges
Instructions
- Preheat your oven to 325°F (165°C).
- In a small bowl, mix salt, pepper, minced garlic, rosemary, and thyme. Rub the mixture evenly over the shoulder roast.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the seasoned roast on all sides until browned, about 3-4 minutes per side.3–4
- Pour beef broth into the pot. Add carrots, potatoes, and onion around the roast.
- Cover the pot with a lid and transfer it to the preheated oven. Roast for about 3 hours, or until the meat is tender and easily pulls apart with a fork.
