The tacos pre-packaged flavors are nowhere near as fresh and vibrant when compared to making them from scratch. Fast and simple, perfect for those busy nights. The chicken is marinated with lime, cilantro and spices, then grilled for a delicious char flavor. Wrap the soft tortilla around it and top with some butter leaf lettuce slaw, a smear of avocado cream, then finish with sprinkle Cotija cheese. Have a toppings bar for your taco buffet. - Seasoned Salt: 1 1/4 tsp (I used Lawry’s Fire Roasted Chili & Garlic)
- Olive Oil: 1 tsp
- Lime Juice: 1 tsp
For the taco:
- Romaine Lettuce: 2 1/2 cups 4 oz shredded
- Tomato: 1/2 cup 1 medium vine ripe, chopped
- Cilantro: 1/4 cup loosely chopped
- Red Onion: 1/4 cup thinly sliced
- Olive Oil: 1 tsp
- Lime Juice: 2 tsp
- Kosher Salt: 1/4 tsp
- Black Pepper: Pinch freshly ground
- Corn Tortillas: 8
- Cotija Cheese: 4 tbsp crumbled
- Avocado: 5 ounces sliced
- Radishes: Thinly sliced for garnish, optional
- Lime Wedges: 4 for serving
Instructions
- Season the chicken with seasoned salt, olive oil, and lime juice. Marinate for at least an hour in the refrigerator.
- Heat an outdoor grill or indoor grill pan on medium-high heat. Oil the grates and grill the chicken for about 2 minutes. Turn and cook for an additional 1 minute, or until cooked through. Set aside on a cutting board and slice into thin strips.
- In a large bowl, mix the shredded lettuce, chopped tomato, cilantro, thinly sliced red onion, olive oil, lime juice, salt, and pepper. Set aside.
